Skinning of tomatoes

Tomatoes are good combines with cauliflower, potato or courgette. This is how I prepare tomatoes for Xavier. This works wonder, especially when I gave Xavier Spinach with potato and fish flakes. Tomatoes can cover the green smell of the spinach and at the same time add a very nice taste to the cereal. I guess Xavier loves tomatoes just like me. I had even mixed potato, tomato and carrot together. It tastes just as nice !!

Method:

1. Simply rinse and plunge the tomatoes in boiling water for 30 secs.
2. Transfer to cold water, skin and deseed.
3. Chop or minced the flesh.
4. Suitable for freezing if you want to.

Wedding Dinner @ Mt Faber SAFRA

15th November 2008, we were invited to Aunty Simin and Uncle Adrian's wedding at Mt Faber SAFRA. This is my first visit there. Here's a glimpse of the invitation. Muumy told Aunty Simin to email her instead of sending by post to save the trouble.. hee ..

Aunty Simin, a long time friend of mummy. They knew each other while working at IRAS, while waiting for their O levels result. Been almost 10 years !!???

Before that I did see her before with Aunty Cecilia. We went for high tea at Orchard Hotel together with Da yi (Jo)

Mummy dressed me up in the black jumper. Hee.. here's one pose !!

And one funny face.. hahaha

Before, we went for the dinner, we had a walk at Vivocity and as well as a pre-dinner @ White Dog Cafe. Daddy and mummy enjoying their cakes while I enjoyed applying gel (my saliva) on daddy's hair !!

During the dinner, I was exceptionally good, no fussing, as I was well entertained by the revolving lights around the ballroom. But of course, till the last few dishes, my patience of sitting in the pram alone ran out and there daddy goes, entertaining me with the shoulder ride again !!

One shot with mummy !!

And home sweet home we went after saying goodbye and thanking the beautiful bride for the nice dinner.

Peach/ Nectarine Puree

After a long search, finally found my peaches. Not that I don't see them around, but I seriously lost faith in China products, especially food. Not discriminating them though.

I found this at Parkway Parade Cold Storage.

White peaches from Australia. Peaches are good source of vitamin C and easy to digest. The puree works well when combined with strwberries, banana or blue berries. (Ref from Annabel Karmel "Top 100 baby purees" ) This is Nectarine

When I first fed Xavier the peach puree mixed with barley cereal, he gave a sourish look by kniting his brows together. What a sight !! I could not help by laughing !!

But he finished up the whole peach mixed with 2 tablespoons of cereal without any fuss !! He must have loved it to bits.

Ingredients:
1. One ripe peach / Nectarine.

Method:
1. Bring a pan of water to boil.
2. Score a cross on the base of the fruit.

3. Submerge into boiling water for 1 minute.
4. Skin, cut into half and discard the stone.
5. Blend into puree/ chop the flesh (For older babies)

Pumpkin Butternut Puree

I'm not sure if this is butternut.. But I think should be heh.. Been looking around for quite some time, and finally I found it in Carrefour located at Plaza Singapura. So this is how a butternut looks like.

Butternut squash is easily digested, and rarely cause allergies and provides a good source of betacarotene, potassium and Vitamin C & E. (Ref from Annabel Karmel "Top 100 baby puree)

Ingredient:
1. One portion of butternut

Method:
1. Cut the butternut portion into cubes.

2. Steam for about 10 -15 mins or until tender.
3. Put into blender and blend.

4. Add in ebm for desired consistency

Spinach puree

Spinach is an amazing source of Calcium! Spinach also contains respectable amounts of Vitamin A and Selenium too! Spinach is an oxalate food as well as a nitrate food so eating spinach in moderation is a good idea!

Just to share some information on the Nitrates concerns,

The highest concentration of nitrates occurs in water, root vegetables and leafy vegetables such as spinach, lettuce and other greens.

The concentration and amount of occurring nitrates will vary depending on the type of vegetable, the temperature that it is grown at, the sunlight exposure, soil moisture levels and the level of natural nitrogen in the soil.

Foods that tend to accumulate the highest amount of nitrate include:
1. Spinach
2. Beets
3. Cabbage
4. Broccoli
5. Carrots

Root vegetables such as carrots, beets and broccoli all contain nitrates though at a much lower level than do the leafys. Leafy vegetables include spinach, cabbage or other greens like Kale

For more information to read up, pls visit:

Anyway, I bought this pack of frozen spinach from Carrefour.

Xavier is gonna hate me for this cos he hates the greens !! But no other options, as spinach is high in iron contents, which is lacking in the breast milk after 6 months. But take in moderation though. Personally, I dun find it appetizing after I saw the end result when I pureed it, let alone Xavier !! Plus, I hava made so many cubes to stock up !! Check it out below !!

Ingredients:
1. A cube of frozen spinach

Method:
1. Rinse spinach under running water.
2. Put into boiling water and boil for about 5 mins.
3. Put into blender and puree

It really has a very green smell. So I mixed the spinach with sweet ptato or carrots so as to allow the natural sweet taste to cover the smell. I have even mixed in with minced pork as well.
But Xavier is sure smart, he knows that I have hidden the greens. Before he rejected totally, he ate some spoonful and gave me the look "oooh... so this is spinach !! " as he gradually discovered that !!
